Double Cook Pork with Bok Choy

If there is anything I like about cooking, then it has to be reusing any leftovers. Most of the time after a meal, there is not much leftover if the dishes are stirfry. However, if it is something like grill or barbeque meat then there are bound to be tons of leftover. In my family, we always heat up the leftovers for the next meal, but sometimes never finish and thrown away. Today, I’m going to share a simple recipe of how to use some leftover grill/barbeque meat.

  • Thinly Sliced grilled/barbeque meat
  • ~3 lbs of greens, your choice, I went with bok choy but you can always cabbage, broccoli, sher li hon, yu choy, etc.
  • Cooking Oil
  • Salt

Like always, prepared your vegetables for stir frying. In a wok or pot, heat up about 2-3 tablespoons of oil to medium heat. After the oil heats up, add the meat. Stir it until it is warm this should take about a minute, some slices of the meat will turn golden, but it’s okay as long as it is not burnt. After a minute, add the vegetables and allow it to cook. Add in salt if needed.  When vegetables are done, remove immediately from the stove. Serve warm with rice.

This is a nice way to use up any leftover grill meat, and I love using grill meat since it has that nice smoky smell to it. If you decide to use this recipe or make a spin off please let me in the comments below and do share some pictures!
